Ingredients
1 ½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon olive oil
1 large onion, chopped
3 carrots, sliced
2 celery stalks, sliced
2 cloves garlic, minced
3 medium potatoes, diced
1 (14-ounce) can diced tomatoes, with juices
4 cups low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 cups fresh spinach or kale, chopped
Salt and pepper to taste
Fresh parsley for garnish (optional)
Juice of half a lemon (optional, for brightness)
Directions
Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until lightly browned (about 5 minutes). Remove chicken and set aside.
Add onion, carrots, and celery to the pot. Sauté for 4–5 minutes until softened.
Stir in garlic, potatoes, tomatoes, broth, thyme, and rosemary. Return chicken to the pot.
Bring to a boil, then reduce heat and simmer for 25–30 minutes, until potatoes are tender and chicken is cooked through.
Add spinach or kale and simmer another 2–3 minutes until wilted.
Season with salt, pepper, and lemon juice to taste. Garnish with fresh parsley if desired.
